Marsha’s “Fat Cat” Quiche

Ingredients:

9 slices of ham cut into small squares

1 cup half & half cream

1/3 cup of diced scallions

2 eggs

8 oz. Hellmann’s Mayonnaise

1 frozen deep-dish pie crust (PET brand)

8 oz. shredded Swiss cheese

2 Tbsp Flour

In a large plastic zipper bag add ham, scallions, Swiss cheese and 2 heaping tablespoons of flour. Lock bag and shake until all ingredients are well covered with flour. (Contents can be stored in refrigerator overnight)

Sauce:

Whisk mayonnaise, 2 eggs and cream together until smooth.

Add ingredients from zipper lock bag into the frozen pie crust, spreading evenly. From the center point of the pie, drizzle all of the sauce over the dry ingredients.

Bake on center rack of oven at 350 degrees for 1 hour.

Cool for 15 minutes before slicing.

Quiche out of the oven

Sunday Brunch:   Quiche, Spring Salad with fresh raspberries, crumbled Feta cheese tossed with a Red Wine Vinaigrette dressing. Served with a yummy slice of Apple Cinnamon Loaf…delicious!
