Marsha’s “Fat Cat” Quiche
Ingredients:
9 slices of ham cut into small squares
1 cup half & half cream
1/3 cup of diced scallions
2 eggs
8 oz. Hellmann’s Mayonnaise
1 frozen deep-dish pie crust (PET brand)
8 oz. shredded Swiss cheese
2 Tbsp Flour
In a large plastic zipper bag add ham, scallions, Swiss cheese and 2 heaping tablespoons of flour. Lock bag and shake until all ingredients are well covered with flour. (Contents can be stored in refrigerator overnight)
Sauce:
Whisk mayonnaise, 2 eggs and cream together until smooth.
Add ingredients from zipper lock bag into the frozen pie crust, spreading evenly. From the center point of the pie, drizzle all of the sauce over the dry ingredients.
Bake on center rack of oven at 350 degrees for 1 hour.
Cool for 15 minutes before slicing.
Quiche out of the oven
Sunday Brunch: Quiche, Spring Salad with fresh raspberries, crumbled Feta cheese tossed with a Red Wine Vinaigrette dressing. Served with a yummy slice of Apple Cinnamon Loaf…delicious!

Apple Cinnamon Loaf
1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and chopped
Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter.
Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.
Measuring, leveling, anchoring, nailing, all necessary for the Finale, but this is more about: Location! Location! Location!
Just like surveying worthwhile property to purchase, select a view to exploit with your mirror. It should enhance the view and/or expand the space.
Have someone position the mirror in the location of your choice. Investigate the view it provides. Does it enhance the area or provide a sense of expansion?
If not, look for another place for the mirror!

This mirror is placed over the kitchen sink to create a window. The reflection offers a view and an expansion of the space.
The mirror in the hallway reflects an opposite wall, which is part of the living room. The reflection reveals framed art, an arrangement of exotic plants, and an unusual lamp, which are all “framed” by the hall mirror. The eye sees an expanded and enhanced space, and the brain ignores the fact that the space is small. One of my favorite design tricks!
On a recent Friday evening, I shared a meal with a friend at a favorite Italian restaurant. The place was deeming with other diners, so we asked to be seated in the bar area. The table was a bit wobbly, but a gracious diner, sitting at the next table with a young boy, signaled a waiter for help. Our rescuer turned out to be Tina Gilardi, one of the owners, and she was delightful. The food is always delicious, but hers and Phil’s personalities added something extraordinarily special to the evening. The robust and friendly atmosphere reminded me of a welcoming Italian family gathering. Tina remarked about how food was a declaration of love and caring. Many of the diners must sense how she feels, because so many came by to say hello and to give her a hug. Now, there’s the true magic of Philly G’s! I’m requesting the same wobbly table next time. What fun we had!
Tina added a dessert selection of Pistachio gelato and another flavor to our meal and asked our opinion.
